INSTRUCTIONS

Season chicken with salt and pepper. Sear in olive oil over medium-high heat, 3–4 min per side. Remove and set aside.

Melt butter in the same pan. Cook garlic 1 min until fragrant. Add sun-dried tomatoes; cook 1 min more.

Pour in cream and broth. Simmer and stir in Parmesan. Cook 3–5 min until slightly thickened.

Stir in spinach until wilted. Return chicken to pan; spoon sauce over it. Simmer 1–2 min.

Serve immediately, on its own or with zucchini noodles.
