Preheat oven to 350°F. Grease a 12-cup muffin tin.

Whisk egg whites, almond milk, garlic powder, salt, and pepper.

Divide spinach, bell pepper, and feta evenly among the muffin cups.

Pour egg mixture over the vegetables, filling cups ¾ full.

Bake 20–25 min until set and lightly golden. Cool before removing.

Store in an airtight container up to 5 days. Reheat 30–60 seconds in the microwave.
