Zucchini Noodle Bolognese

A rich, hearty meat sauce simmered low and slow, served over light zucchini noodles. All the comfort of the Italian classic, without the carb load.

INSTRUCTIONS

1 Cook carrot, celery, and onion in olive oil over medium heat until softened, 8–10 min.
2 Add garlic; cook 1 min. Add ground meat; brown completely.
3 Deglaze with red wine; simmer until reduced by half.
4 Add crushed tomatoes, broth, oregano, salt, and pepper. Simmer on low, covered, for at least 1 hour.
5 Sauté zucchini noodles 2–3 min until just tender-crisp. Serve bolognese over noodles with Parmesan.
