Cook carrot, celery, and onion in olive oil over medium heat until softened, 8–10 min.

Add garlic; cook 1 min. Add ground meat; brown completely.

Deglaze with red wine; simmer until reduced by half.

Add crushed tomatoes, broth, oregano, salt, and pepper. Simmer on low, covered, for at least 1 hour.

Sauté zucchini noodles 2–3 min until just tender-crisp. Serve bolognese over noodles with Parmesan.
